ABSTRACT.- The expansion of olive orchards into regions with no tradition of olive production and humid climates, such as Uruguay, with more than 1200 mm of annual rainfall, calls into question the need for irrigation. In these regions, however, years with water deficit during summers are quite common. The vapor pressure deficit during summer is lower than in countries with a Mediterranean climate. The high variability in interannual water availability in the current context of climate change, with a growing tendency for extreme events to occur, emphasizes the need to evaluate the production response of olive trees to irrigation. To achieve this, three irrigation treatments were applied to Arbequina and Frantoio cultivars according to the value of the maximum crop evapotranspiration: a first treatment applying 100% ETc, corresponding to being fully irrigated; a second treatment applying 50% ETc; and a third treatment in which neither irrigation nor rain inputs occurred from the end of the pit hardening period until harvest. Results show the possibility of an increasing fruit weight and pulp/pit ratio through irrigation in the local environmental conditions. The oil content in response to irrigation was different within cultivars. Water restriction conditions did not affect the oil content of olives in Arbequina, while in Frantoio it increased it. Polyphenols in fruit increased under water stress for both cultivars. The technological applicability of the results obtained must be accompanied by an economic analysis. The results obtained highlight the need for better use of irrigation water during the growth and ripening phase of the olive fruit under a humid climate.

RESUMEN:
Los cultivos de servicios (CS) pueden aumentar la materia orgánica del suelo (MOS) que presentan los agroecosistemas
actuales. Nuestro objetivo fue evaluar si los cambios que ocurren en la MOS se deben a un aumento en la formación de
Cnuevo por humificación; o a una disminución en la descomposición del Cviejo (formado previo al experimento). A su vez,
estos cambios fueron estudiados en la MOS particulada (C-MOP) y en la asociada a los minerales (C-MOAM).
Instalamos un experimento en el este de Uruguay (INIA-33) que consistió en 5 rotaciones de soja con diferentes CS de
gramíneas, leguminosas o crucíferas y un testigo de monocultivo de soja y tomamos muestras de suelo hasta 15cm de
profundidad en el momento inicial y final. Las muestras se fraccionaron en MOP y MOAM y mediante técnicas
isotópicas de 13C diferenciamos el Cnuevo y Cviejo en cada fracción. El contenido de C-MOP del tratamiento testigo (2,74
TnC/ha) fue menor que en las rotaciones con CS, pero en ninguna se alcanzó el C-MOP que presentaba el campo natural
(5,34 TnC/ha). Los menores contenidos de C-MOP estuvieron provocados por el aumento en la descomposición del Cviejo,
mientras que todas las rotaciones formaron la misma cantidad de Cnuevo. El testigo también presentó los menores
contenidos de C-MOAM (27,17 TnC/ha). Todos los CS tendieron a aumentar el C-MOAM y las leguminosas alcanzaron
los niveles que presentaba el campo natural (30,98 y 32,68 TnC/ha, respectivamente) debido a una menor descomposición
y a que formaron más MOAM a partir de la MOP que el resto de las rotaciones. Entre los CS evaluados, avena, raigrás y
vicia presentaron los mayores contenidos de C-MOP y, vicia y trébol alejandrino los mayores contenidos de C-MOAM.
Esto sugiere que para aumentar ambas fracciones deberíamos aportar, en simultáneo, biomasa con calidades diferentes
mediante mezclas de CS de leguminosas y gramíneas. MenosRESUMEN:
